Pecan Banana Bread
Are you even human if you don't like banana bread? Cole's mom makes the BEST baked goods and Cole is especially obsessed with her banana bread. I wanted to create a clean version of our favorite snack so I could devour the loaf guilt free! haha This recipe is refined sugar free, made with whole wheat flour and delicious! Enjoy friends!
Ingredients
- 1 cup mashed ripe bananas 
- 1/3 cup coconut oil (melted) 
- 1/2 cup honey or pure maple syrup 
- 2 eggs 
- 1/4 cup almond milk 
- 1 tsp vanilla 
- 3/4 cup chopped pecans 
- 1 3/4 cup whole wheat flour 
- 1 tsp baking soda 
- sprinkle of sea salt 
- 1/2 tsp cinnamon 
Directions
- Preheat the oven to 325 degrees F. 
- Grease a 9 x 5 loaf pan. 
- In a large bowl combine all dry ingredients ( pecans, whole wheat flour, 1 tsp baking soda, sea salt and cinnamon) 
- Add in wet ingredients (mashed banana, coconut oil, honey, almond milk , and vanilla). 
- Pour the batter into the pan and bake for 1 hour. Cool for 15 minutes before slicing.
