Thai Chicken Lettuce Wraps
I have been wanting to share this for a while now because it's one of my favorite meal! It is so easy, healthy and flavorful It's loaded with fresh veggies and packs tons of flavor. I love to prep extra veggies in advance so I can make salads and wrap throughout the week with super easy assembly. I also grill the chicken in batches so I have it on demand when I need a quick meal. If you are looking for a meatless option, sub the chicken for tofu (use the same seasoning) or add extra avo!
The toppings are so simple! I love using shredded carrots, red cabbage, cilantro, cucumbers, avocado and coconut peanut sauce.

Ingredients:
- 1 head of lettuce 
- 2 cups of red cabbage (chopped) 
- 2 cups of shredded carrots 
- 1 cucumber (diced) 
- 1/4 cup cilantro (chopped) 
- 1 avocado (sliced) 
- pickled red onion 
- coconut peanut sauce from Whole Foods or this homemade one is great too 
Chicken:
- 2 chicken breast (cubed) 
- 1/2 small onion (diced) 
- 1 Tbs coconut aminos ( or soy sauce) 
- 1 tsp garlic (minced) 
- 1 tsp ginger powder 
- salt and pepper 
Directions for crepe:
- In a sauté pan drizzle 1 tsp oil. Turn the heat to low and sauté garlic and onions together for 2-3 minutes. Add the diced chicken, coconut aminos, ginger, salt and pepper. Cook for 6-7 minutes until thoroughly cooked. We also grill our chicken sometimes and marinade it with the peanut sauce. Both options are delicious! - Prepare the toppings. Prep a little extra to use as throughout the week. Dice red cabbage, carrots, cilantro, cucumbers, red onion and avocado. 
- Assemble the lettuce wraps and drizzle the coconut peanut sauce on top. Enjoy!
